Almost everyone starts by picking the grill, which is fair, because that is the fun part. But a grill is a box. In ten years you will swap it out in an afternoon. What you will not swap out easily is everything running behind and underneath it.

Gas has to be sized for the total load of every appliance going in, not just the grill, and run and pressure tested by a licensed trade. Outdoor receptacles need GFCI protection and weather-resistant covers. If there is a sink, the supply and drain have to be built so they can be drained before the first hard freeze. Otherwise you are opening up a masonry box in February to get at a split line.

Then the structure. Built-in grills and burners need non-combustible enclosures with the clearances the manufacturer specifies, so we frame in steel rather than wood. Access panels go in at every shutoff and connection. The pad underneath gets sloped so water leaves instead of sitting under the cabinets, and the countertop is a material that will not spall through a Tennessee freeze-thaw cycle.

Does an outdoor kitchen need permits?

The gas and electrical work does, and it has to be done by licensed trades and inspected. The masonry structure itself may not on its own, depending on scope and where it sits on your property. We sort out which permits your build needs and pull them, so you are not the one calling Metro Codes to ask.
